I have always loved bread. What began as a simple pleasure—fresh from a bakery or warm from the toaster—grew into a deeper pursuit as I followed the path to becoming a chef. After culinary school in Toronto and time in kitchens focused on local ingredients, I continued my training in pastry in France and bread making in England, where my appreciation for truly great bread was redefined.

But there’s a challenge every bread lover knows: the moment bread leaves the oven, it begins to lose its magic. Outside of places like Paris, where a boulangerie is always nearby, it’s difficult to experience bread at its peak—warm, vibrant, and full of life. By the time it reaches the table, something has already been lost.

This is the problem Café Lottie was created to solve.

Our breads are crafted with care, then par-baked and frozen at their pinnacle—preserving flavor, structure, and quality. For our demi baguettes, we pause the process just before the final crust forms, leaving that last, crucial moment of golden crispness to unfold in your own oven.
